- 1 c. corn meal (white)
- 2 c. water
- 1/2 c. milk
- 2 eggs
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1 c. flour
Directions

1Place corn meal and water in saucepan.

2Cook over low heat until thick.

3Remove from heat.

4Beat eggs and milk together and add to corn meal mixture.

5Combine salt, baking powder and flour. Add to first mixture and stir until blended. Heat skillet or griddle with about 3 tablespoons of oil.

6Spoon mixture into

7hot oil, approximately 2 to 3 tablespoons per cake.

8Brown on both sides.

9More oil may be added as needed or desired.

10If batter is too thin, add more flour.

11If too thick, add more milk.

12Serve with apple butter, syrup (like Karo) or honey.
