- cold water
- 2 lb. white cabbage
- salt and pepper to taste

1Cover corned beef with water in a kettle.

2Heat to boiling. Skim off foam.

3Cover and simmer 2 hours, or until meat is tender. Wash cabbage; remove the heart.

4Cut into quarters; shred or leave in wedges, if preferred.
