Corned Beef Casserole

- 1 (8 oz.) pkg. medium noodles
- 3 Tbsp. margarine
- 1/2 c. chopped onion
- 1/2 c. chopped bell pepper
- 2 c. Cheddar cheese, cubed (mild)
- 1 can cream of chicken soup
- 1 can corned beef, torn apart
- 1 c. crackers, crumbled
- 1 Tbsp. margarine
Directions

1Cook noodles and drain.

2In a small skillet, melt margarine. Add onions and pepper.

3Saute 5 minutes.

4In a buttered 2 1/2 or 3-quart casserole dish, put half of noodles, half of onion and pepper mixture, 1 cup cubed cheese, then add corned beef on top of cheese.

5Repeat the layers (noodles, onions, peppers and cheese). Stir soup as directed on can with milk.

6Pour over casserole.

7Add crackers.

8Pour 1 tablespoon melted margarine over crackers.

9Bake at 350° for 40 minutes.
