Cornmeal Breakfast Waffles

Ingredients

  • 4 large eggs
  • 4 cup milk
  • 2 tsp sugar
  • 2 1/2 cup cornmeal
  • 2 tbsp baking powder
  • 3 1/2 cup all purpose flour
  • 6 tbsp vegetable oil
  • 1 tsp vanilla extract (I use extra)

Directions

    Mix dry ingredients together in a large bowl.

    Add the oil, eggs, and milk.

    Mix well.

    Pour the batter into a hot Belgian or regular waffle iron.

    Cook according to the instructions on your waffle maker.

    Set each one on a baking rack in the oven on low to keep them slightly crispy.

    Serve with maple or other flavored syrup.
