  • 1/2 c. cornmeal
  • 1/2 c. flour
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1 egg, beaten
  • 1/2 c. milk
  • 2 Tbsp. bacon drippings

Directions

    Sift cornmeal, flour, sugar, salt and baking powder together into mixing bowl.

    Stir in egg, milk and bacon drippings, mixing well.

    Fill 8 greased muffin cups 2/3 full with batter.

    Bake in a preheated 425° oven for 15 minutes or until browned.
