- 12 cup oil
- 2 medium eggs
- 1 cup buttermilk
- 1 teaspoon salt
- 2 tablespoons sugar
- 1 teaspoon baking soda
- 34 cup cornmeal
- 1 cup flour
Directions

1Into your favorite big bowl, measure the oil.

2Crack in the eggs and add the buttermilk.

3Beat with a whisk until thoroughly combined.

4Add the salt, sugar, soda, cornmeal and flour.

5Stir casually, but not too aggreively.

6When mixed, but still lumpy, stop stirring.

7Oil up a dozen muffin cups.

8Divide the bater evenly amongst the muffin cups.

9Bake at 400F for about 20 minutes.

10Remove from the oven and cool slightly before eating.
