  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 34 teaspoon salt
  • 2 -4 tablespoons sugar
  • 1 egg, beaten
  • 1 14 cups sour cream
  • 14 cup shortening, melted

Directions

    Combine first 6 ingredients in a large bowl; make a well in center of mixture.

    Combine egg, sour cream, and shortening, add to dry ingredients, stir just until moistened.

    Spoon into greased muffin pans, filling two-thirds full.

    Bake at 425F for 15 minutes or until golden brown.

    Remove from pans immediately.
