- 1/2 cup raisins
- boiling water
- 1 cup cornmeal
- 1 1/2 cups buttermilk
- 1 1/3 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 egg
- 1/2 cup oil
- 1/2 cup honey
Directions

1Scald raisins with boiling water and drain well.

2Combine cornmeal and 2/3 of the butter milk and set aside.

3Mix together flour, baking powder, salt and baking soda.

4Beat eggs and add oil, honey and remaining buttermilk.

5Add to cornmeal-buttermilk mixture and then to flour mixture. Add raisins.

6Place in greased muffin tins and bake at 400 for twenty minutes.
