- 12 cooked potatoes, mashed
- 1 c. dry instant potatoes
- 1/2 lb. unsifted flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1/4 lb. butter
- 1 Tbsp. grated onion
- 4 beaten eggs
- toasted croutons
- cracker crumbs
- butter
Directions

1Combine first 5 dry ingredients; mix lightly. Add creamed butter and onion. Add beaten eggs and mix well. Using an ice cream scoop, form mixture into balls around 4 or 5 small toasted croutons.

2Place onto floured pan. Bring water or broth to a boil. Drop dumpling in to cook about 10 minutes or until they float. Serve. Sprinkle with browned butter and cracker crumbs.
