  • 13 cup yellow cornmeal
  • 12 cup sugar
  • 34 teaspoon salt
  • 12 cup butter
  • 2 cups milk
  • 2 eggs, beaten
  • 14 ounce yeast, one package
  • 14 cup water, lukewarm
  • 4 cups flour

Directions

    Place cornmeal, sugar, salt, butter, and milk in a double boiler, cooking until thick, stirring frequently.

    Cool to lukewarm.

    Place yeast and water in a bowl to foam.

    Add beaten eggs and yeast mixture to cornmeal mixture.

    Mix well.

    Add flour to form a soft dough.

    Knead well, place in greased bowl, cover and let rise for one hour.

    Punch down and form rolls.

    Place on a lightly oiled sheet pan,set in a warm place to rise for at least thirty minutes.

    Preheat oven to 375 Degrees.

    Bake for 20 to 30 minutes.

    I use rapid rise yeast, so I just mix the yeast and flour, and combine the eggs and water.
