Cottage Cheese Dinner Rolls

Ingredients

  • 2 pkg. dry yeast
  • 1/2 c. lukewarm water
  • 2 c. cottage cheese (small curd)
  • 1/4 c. sugar
  • 2 eggs, slightly beaten
  • 1/2 tsp. soda
  • 2 tsp. salt
  • 4 c. plain flour

Directions

    Dissolve yeast in water.

    Heat cheese to lukewarm; mix with yeast, sugar, eggs, soda and salt.

    Stir in flour to make a soft dough.

    Place in greased bowl.

    Turn to grease all sides of dough. Let rise in oven (place pan of hot water on rack under bowl) about 1 1/2 hours, until doubled.

    Punch dough down, pinch in half and work each half into 12 pieces.

    Roll each piece in flour. Place on greased pan; let rise again until doubled.

    Bake at 350° for 20 minutes.

    Brush with butter and serve warm.
