Cottage Cheese Fruit Bread

- 2/3 c. dried apricots
- 2/3 c. dried prunes
- 1/3 c. butter
- 1/2 c. packed light brown sugar
- 2 eggs
- 1 Tbsp. each: grated lemon and orange rind
- 1 1/2 c. (12 oz.) cottage cheese
- 2 c. sifted flour (all-purpose)
- 2 tsp. baking powder
- 3/4 tsp. baking soda
- 3/4 tsp. salt
Directions

1Place apricots and prunes in a 1-quart saucepan.

2Add water just to cover fruit.

3Boil gently (uncovered) for about 30 minutes. All liquid will be absorbed.

4Cool, then chop fruit.

5Cream butter and sugar in large mixing bowl.

6Add eggs, beating well, one at a time.

7Add lemon and orange rinds and cottage cheese; beat well. Sift together flour, baking powder, baking soda and salt; combine into creamed mixture.

8Fold in chopped fruits.

9Spread into 2 well buttered 7 1/2 x 3 3/4 x 2 1/4-inch loaf pans.

10Bake at 350° for 45 to 50 minutes.

11Allow to stand 10 minutes.

12Remove from pans.
