- 5 large potatoes, cooked, peeled and diced
- 2 c. (8 oz.) shredded Cheddar cheese
- 1 medium onion, chopped
- 1/2 c. chopped green pepper
- 1 (2 oz.) jar chopped pimiento, drained
- 1 tsp. salt
- 1/2 c. milk
- 1 tsp. minced parsley
- 1 slice bread, crumbled
- 1/4 c. butter, melted
- 1/2 c. cornflakes, crushed
Directions

1Combine everything except butter, milk and cornflakes.

2Place in a 9 x 9-inch baking pan.

3Mix the butter and milk; pour over potato mixture.

4Sprinkle with cornflakes.

5Bake for 30 minutes at 400°.
