- 2 Tbsp. onion, chopped
- 1/3 c. margarine
- salt and pepper to taste
- 4 eggs
- 1 c. shredded Cheddar cheese
Directions

1Cook potatoes, green pepper and onion in margarine until lightly browned.

2Season to taste with salt and pepper.

3Break the eggs over potato mixture. Cover and cook until eggs are done. Sprinkle with cheese. Cover until cheese is melted.
