- 1 1/3 c. sifted flour
- 1 tsp. salt
- 1 egg, slightly beaten
- 1 c. corn oil
- 1 1/2 tsp. baking powder
- 1 (17 oz.) can cream-style corn
Directions

1Sift together flour, baking powder and salt.

2Mix corn and egg. Add to dry ingredients, stirring lightly.

3Heat corn oil in a large skillet over medium heat.

4Drop batter by tablespoons into hot corn oil, one layer at a time. Fry about 2 minutes on each side or until golden brown. Drain on absorbent paper.

5Makes 16 fritters.
