Country Lima Beans

  • 5 strips bacon
  • 1 c. chopped onions
  • 2 Tbsp. flour
  • 2 cans baby lima beans
  • 1 large can tomatoes (2 1/2 c.)
  • salt and pepper to taste

Directions

    Cut bacon into small pieces.

    Fry until crisp.

    Pour off all but 2 tablespoons fat.

    Add onions and cook until soft.

    Sprinkle with flour.

    Stir to make roux.

    Cut tomatoes into small pieces. Add to roux.

    Stir.

    Add lima beans.

    Heat and serve.
