- 5 strips bacon
- 1 c. chopped onions
- 2 Tbsp. flour
- 2 cans baby lima beans
- 1 large can tomatoes (2 1/2 c.)
- salt and pepper to taste
Directions

1Cut bacon into small pieces.

3Pour off all but 2 tablespoons fat.

4Add onions and cook until soft.

5Sprinkle with flour.

6Stir to make roux.

7Cut tomatoes into small pieces. Add to roux.

9Add lima beans.

10Heat and serve.

11The gravy can be made ahead of time.
