  • 1/2 lb. hamburger
  • 1 can tomatoes
  • 1 onion
  • 3 medium potatoes
  • 2 c. shredded cabbage or 2 c. sliced yellow squash
  • 3 Tbsp. margarine
  • salt and pepper to taste

Directions

    Melt margarine in bottom of iron skillet or baking dish.

    Slice potatoes over margarine; lightly salt and pepper.

    Spread cabbage or squash over potatoes; lightly salt and pepper.

    Slice onion over cabbage or squash.

    Mix canned tomatoes and hamburger; lightly salt and pepper.

    Cover with onion slices (entire top).

    Bake at 425° for about 1 hour, or until brown.

    Serve with corn muffins.
