  • 4 to 6 yellow squash
  • 2 medium potatoes, diced
  • 1 medium onion, sliced
  • 2 cloves garlic
  • 4 to 5 Tbsp. oil
  • salt
  • pepper
  • cayenne to taste

Directions

    In thick skillet, heat oil and add potatoes and onions.

    Slice squash over the top and add garlic.

    Season with salt, pepper and cayenne.

    Stir, turn heat to low and cook 30 to 40 minutes.

    Stir occasionally.
