Ingredients

  • 1 frying chicken (about 3 lb.), cut into serving pieces
  • 2 Tbsp. butter
  • 2 Tbsp. olive oil
  • 1 medium size onion, sliced
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 lb. zucchini
  • 2 large green peppers
  • 1 1/2 Tbsp. olive oil
  • 1 tsp. chopped basil leaves or 1/4 tsp. dried sweet basil
  • 1/2 c. dry white wine

    In a large skillet, brown the chicken in butter and olive oil. Place onion around chicken.

    Sprinkle with salt and pepper.

    Cover and cook slowly for about 15 minutes.

    While chicken is cooking, wash and cut zucchini in 1/2-inch thick slices.

    Wash peppers. Remove stems and seeds.

    Rinse in cold water and slice lengthwise in 1-inch wide strips.
