Country Supper Soup

Ingredients

  • 1/2 lb. bacon
  • 2 cans onion soup
  • 1 c. celery, chopped
  • 1 c. carrots, chopped
  • 1/2 lb. diced zucchini
  • 1 bay leaf
  • 9 c. water
  • 1 can tomatoes or 1 large can tomato juice
  • 1 c. potatoes, diced
  • 1 clove garlic
  • pinch of thyme, marjoram and basil
  • 1 c. broken spaghetti noodles
  • parsley flakes
  • 2 cans lima beans (undrained)
  • 1/4 c. Parmesan cheese

Directions

    Cut bacon in small pieces.

    Place all main ingredients (first 11 ingredients) together in a large soup kettle and simmer for 1/2 hour.

    Add remaining ingredients and continue simmering for another 1/2 hour.

    Serve with garlic bread.
