  • 5 lb. lean beef strips
  • 4 oz. salt
  • 1/2 oz. garlic powder
  • 1/2 oz. black pepper
  • pinch of cure salt
  • 2 Tbsp. liquid smoke
  • 2 qt. water

    Cut beef strips about 1/4-inch thick. Make brine, combining all ingredients. Soak meat in brine approximately 6 hours or longer. Remove meat from brine and hang up or lay out flat to dry.
