- 1 pound Jumbo Lump Crab
- 1 whole Small Red Bell Pepper Finely Diced
- 1/4 cups Minced Green Onions
- 2 Tablespoons (heaping) Mayonnaise
- 1 teaspoon Dijon Mustard
- 1 teaspoon Fresh Ginger, Minced
- 1 teaspoon Chopped Chives
- Sea Salt And Fresh Ground Black Pepper To Taste
- 2 cups Panko Bread Crumbs Divided
- Olive Oil And Butter For Frying
Directions

1Gently mix all the ingredients except for the panko.

2Fold in one cup of the panko.

3Form into cakes and coat with remaining 1 cup of panko crumbs.

4Saute in a combo of olive oil and butter over medium heat until golden brown.

5These are great served with a wasabi mayo or a dill/lemon mayo and a side of your favorite coleslaw.
