- 1 c. crabmeat
- 1 Tbsp. butter
- 2 Tbsp. flour
- 2 Tbsp. Parmesan cheese, grated
- 3/4 c. light cream
- 1 egg yolk
- 2 Tbsp. dry sherry
- 1/2 tsp. salt
- pepper
- 36 canape shells
Directions

1Melt butter in saucepan over low heat.

2Add flour and stir until smooth.

3Add cheese and cream.

4Cook until thickened, stirring constantly.

5Remove from heat and stir in crabmeat, salt and pepper.

6Beat egg yolk lightly with sherry and add to crab mixture.

7Chill until serving time.

8Just before serving, spoon into canape shells.

9Place on cookie sheet and bake at 350° for 5 to 10 minutes until top is bubbly.
