Broccoli Casserole

Ingredients

  • 2 pkg. frozen chopped broccoli
  • 1 can cream of mushroom soup
  • 1 c. mayonnaise
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. grated Cheddar cheese
  • 1 medium onion, chopped
  • 2 eggs
  • 1 roll Ritz crackers
  • 1 stick butter

Directions

    Cook broccoli according to package directions.

    Drain and place half in a greased 2 quart casserole dish.

    Combine soup, mayonnaise, salt, pepper, cheese, onion and eggs.

    Pour half of this mixture over broccoli.

    Add remaining broccoli and top with remaining sauce.

    Crush crackers and mix with butter.

    Sprinkle on top of casserole.

    Bake at 350° for 30 minutes.
