- 1/3 c. chopped mild onion
- 6 Tbsp. butter or margarine
- 1/4 c. flour
- dash of cayenne
- 1/2 tsp. Worcestershire sauce
- 1/2 tsp. Dijon-style mustard
- 1 c. milk
- 1 tsp. fresh lemon or lime juice
- 1 sprig parsley, chopped
- 2 (7 oz.) cans crab meat
- salt
- 1 egg, beaten
- 2 Tbsp. water
- fine bread crumbs
- lemon wedges
Directions

1Saute onion in 4 tablespoons butter for 5 minutes.

2Blend in flour and seasonings.

3Add milk and cook until thick, stirring constantly.

4Remove from heat; stir in lemon juice, parsley and crab meat.

5Season to taste with salt.

6Chill.

7Shape into croquettes with hands.

8Dip croquettes into egg, then in crumbs. Fry slowly in remaining butter until browned on both sides.

9Serve piping hot with lemon wedges.
