- 4 tablespoons butter
- 12 cup green onion, chopped
- 12 cup celery, chopped
- 14 cup pimiento, chopped
- 3 tablespoons all-purpose flour
- 1 cup half-and-half
- 2 tablespoons lemon juice, fresh
- salt, to taste
- cayenne, to taste
- 1 lb crabmeat, lump, picked over for shells and cartilage
- 8 biscuits, flaky, refrigerator-style (uncooked)
- 14 cup white cheddar cheese, aged, grated
Directions

1Preheat the oven to 400 degrees.

2Melt the butter in a medium-size saucepan over medium heat.

3Add the green onions, celery and pimentos and cook, stirring, until the vegetables are just soft, about 6 minutes.

4Blend in the flour.

5Slowly add the half-and-half, stirring constantly, until the mixture is thick and creamy.

6Add the lemon juice and season with salt and cayenne.

7Gently stir in the crabmeat.

8Spoon the mixture into a lightly greased oval baking dish.

9Arrange the biscuits over the mixture and bake until they are golden brown, 10 to 12 minutes.

10Remove from the oven and sprinkle with the grated cheese.
