- 1/4 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 large egg, lightly beaten
- 2 c. buttermilk
- 1 c. cracklings
Directions

1Combine cornmeal, flour, baking soda and salt in a large bowl. Add egg and buttermilk, stirring just until dry ingredients are moistened.

2Stir in cracklings.

3Place a well-greased 10-inch cast-iron skillet in a 450° oven for 4 minutes or until hot. Remove from oven; pour batter into skillet.

4Bake at 450° for 25 minutes or until golden brown.
