Cranberry Muffins

  • 1 1/4 c. sugar
  • 1/4 c. butter or margarine
  • 2 eggs
  • 2 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. milk
  • 2 c. fresh or frozen cranberries, coarsely chopped

Directions

    Preheat oven to 400°. Cream together sugar and butter. Add eggs, one at a time, beating after each addition.

    In a bowl, sift flour, baking powder and salt.

    Add with milk to the sugar and butter mixture.

    Stir by hand just to moisten ingredients. Stir in cranberries.

    Spoon into 18 (2 1/2-inch) muffin cups, filling 3/4 full.

    Bake 25 to 30 minutes. Makes 18 muffins.
