Cranberry Nut Bread

  • 1 c. whole raw cranberries
  • 1 c. English walnuts, chopped
  • 1 Tbsp. plain flour
  • 2 c. flour less 1 Tbsp., sifted
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. soda
  • 1/2 tsp. salt
  • 2 eggs, slightly beaten
  • 1 c. sugar
  • 2 Tbsp. shortening, melted
  • Juice of 1 orange
  • Rind of 1 orange, grated
  • Boiling water

Directions

    Preheat oven to 350°.

    Dredge cranberries and nuts with 1 tablespoon flour.

    Set aside.

    In a measuring cup, combine eggs, shortening, orange juice, and orange rind. Add enough water to make 1 cup liquid. Sift dry ingredients together, twice.

    Stir liquid into dry ingredients until well mixed.

    Fold in cranberries and nuts.

    Bake in a greased loaf pan for 1 hour.

    Remove from pan and cool on a rack.

    Wrap in foil and store in refrigerator or freezer.
