- 1 Tbsp. oil
- 1/3 c. brown sugar
- 1 1/2 c. buttermilk
- 1 egg, lightly beaten
- 1 c. whole wheat flour
- 1 c. unbleached flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 Tbsp. walnuts, chopped
- 1 c. cranberries, finely chopped
Directions

1Preheat oven to 425°.

2Lightly coat a 5 x 9-inch loaf pan with nonstick cooking spray.

3In a large bowl, mix oil and sugar.

4Add the buttermilk and beaten eggs, stirring until smooth.

5In another bowl, combine the remaining ingredients and add to the liquid mixture, stirring just until the batter is moistened.

6Don't overmix it.

7Pour the batter into the prepared pan and bake for 30 minutes or until golden brown.

8Yields 18 1/2 slices.
