  • 2 c. flour
  • 3/4 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. soda
  • 1/2 tsp. salt
  • 2 Tbsp. oil
  • grated rind and juice of 1 orange plus water to make 3/4 c.
  • 1 egg, beaten
  • 1 c. raw cranberries, coarsely chopped

    Heat oven to 350°.

    Grease loaf pan (9 x 5 x 3-inch).

    Blend dry ingredients.

    Mix in oil, orange rind, juice and egg.
