- 2 c. flour
- 3/4 c. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. soda
- 1/2 tsp. salt
- 2 Tbsp. oil
- grated rind and juice of 1 orange plus water to make 3/4 c.
- 1 egg, beaten
- 1 c. raw cranberries, coarsely chopped
Directions

1Heat oven to 350°.

2Grease loaf pan (9 x 5 x 3-inch).

3Blend dry ingredients.

4Mix in oil, orange rind, juice and egg.

5Fold in cranberries.

6Pour into pan.

7Bake 1 hour.

8Cool thoroughly before slicing with a thin, sharp knife.
