  • 4 (6 oz.) lean center loin pork chops (1/2-inch thick)
  • 1/2 tsp. coarsely ground pepper
  • vegetable cooking spray
  • 3 Tbsp. water
  • 2/3 c. fresh or frozen cranberries, thawed
  • 2 Tbsp. + 1 1/2 tsp. sugar
  • 2 Tbsp. unsweetened orange juice
  • 2 Tbsp. water
  • 1/8 tsp. ground cinnamon
  • 1/8 tsp. ground ginger
  • fresh mint sprigs (optional)

Directions

    Trim fat from chops.

    Rub chop with pepper.

    Coat a large nonstick skillet with cooking spray.

    Place over medium-high heat. Add chops and cook until browned on both sides.
