  • 1/2 c. margarine
  • 3/4 c. sugar
  • 2 eggs
  • 3 c. flour
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 c. orange juice
  • 2 Tbsp. orange rind
  • 1/2 c. chopped nuts
  • 1 c. chopped cranberries

Directions

    Beat margarine and sugar until light and fluffy.

    Add eggs, one at a time, mixing well after each.

    Combine dry ingredients and add, alternating with the juice, mixing well after each addition.

    Stir in cranberries and nuts.

    Pour into greased and floured 9 x 5-inch loaf pan.

    Bake at 350° for 1 hour and 15 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan.

    Serve with Sweet Orange Spread.
