- 1 lb. crawfish tails
- 3/4 c. chopped bell pepper
- 3/4 c. chopped onion
- 4 Tbsp. margarine
- 8 oz. grated cheese
- 1/4 small jar sliced jalapenos
- 1 c. cornmeal (yellow)
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. salt
- 2 eggs
- 1 c. milk
Directions

1In a pan saute crawfish, bell pepper and onions in margarine. In a mixing bowl, combine cornmeal, soda, baking powder, salt, eggs and milk.

2Add grated cheese and sauteed mixture.

3Pour into a greased 9 x 13-inch baking dish.

4Bake at 350° for 45 minutes. Yields 12 servings.
