  • 2 eggs
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 medium onion, chopped
  • 1/2 c. cooking oil
  • 1 c. cornmeal
  • 1 c. shredded Cheddar cheese
  • 1/2 c. jalapeno peppers, chopped very fine (canned or fresh)
  • 1 large can cream-style corn
  • 1 lb. crawfish

Directions

    Mix well; bake at 375° for approximately 30 minutes.

    Makes one large cornbread.

    Almost a meal in itself served with salad.
