- 1 1/2 c. cornmeal
- 2 eggs
- 1/2 tsp. soda
- 1 lb. crawfish tails
- 1 lb. mild Cheddar cheese, grated (optional)
- 1 c. sweet milk
- 3/4 tsp. salt
- 1 large can creamed corn
- 1 large onion, grated
- 2 jalapeno peppers, chopped (more if needed)
Directions

1Combine and mix above ingredients.

2Prepare skillet or pan for cornbread by greasing and sprinkling with meal and let brown. Pour batter into skillet.

3Bake at 350° for 45 minutes or until done.
