  • 1 tbsp. butter
  • 1 tsp. olive oil
  • 1 clove garlic
  • 1/2 shallot
  • 1 tbsp. flour
  • 13 c. whipping cream
  • 2 tbsp. chicken broth
  • 1 bag fresh spinach leaves
  • pinch of nutmeg

Directions

    In a large saute pan, over medium heat, melt butter with olive oil.

    Add garlic and shallots and saute until translucent.

    Mix in flour and stir to make a roux.

    Pour in whipping cream and chicken broth and cook for 2 minutes.

    Add in spinach and cook down.

    Stir in a pinch of nutmeg.

    Serve hot.
