Creamed Spinach Royale

- 8 tablespoons (1 stick) butter
- 1 large yellow onion, chopped
- 2 tablespoons flour
- 1 teaspoon ground nutmeg
- 1 cup heavy cream
- 3/4 cup grated Parmesan cheese, plus more if needed
- 1 pound frozen spinach, thawed and drained
- Salt and pepper
Directions

1Melt the butter.

2Add the onion and saute until it is translucent (3 to 5 minutes).

3Add the flour and nutmeg and stir to form a smooth paste.

4Cook for approximately 1 minute, then add the cream and Parmesan cheese, cooking for another 2 to 3 minutes, until you have a thick, cream sauce.
