  • 8 tablespoons (1 stick) butter
  • 1 large yellow onion, chopped
  • 2 tablespoons flour
  • 1 teaspoon ground nutmeg
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese, plus more if needed
  • 1 pound frozen spinach, thawed and drained
  • Salt and pepper
