- 1 small onion, diced
- 2 large pimientos, diced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 12 cups chicken stock
- 1 12 cups cream
- 34 cup grated sharp cheddar cheese
- 12 cup green onion
- salt and black pepper
- 1 dash cayenne pepper (optional)
Directions

1In a saucepan, saute onion and pimentos in butter for 5 to 7 minutes.

2Blend in flour.

3Add stock and cream.

4Cook until thick.

5Add cheese and stir until melted.

6Add 1/4 cup green onions, salt and pepper, to taste, and cayenne if desired.

7Garnish with remaining green onions.
