  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 2 Tbsp butter
  • 1 (14 oz) can low-sodium chicken broth
  • 2 large red potatoes, cubed
  • 2 tsp Dijon mustard
  • 1 tsp salt
  • 1 tsp paprika
  • 1/8 tsp cayenne pepper
  • 3 c frozen corn
  • 1 can creamed corn
  • 4 green onions, chopped
  • 3 c milk, divided
  • 1/4 c flour

Directions

    In a large saucepan over medium heat, saute onion and green pepper in butter until tender.

    Add broth and potatoes; bring to boil.

    Reduce heat, cover and simmer 15 minutes or until potatoes are almost tender.
