Ingredients
- pastry for 2-crust (8-inch) pie
- 1 (1 lb. 13 oz.) can peach slices
- 3/4 c. sugar
- 1 Tbsp. cornstarch
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground nutmeg
- few grains salt
- 1/2 c. cream
- 2 Tbsp. lemon juice
Directions

1Prepare pastry shell and reserve remaining pastry for lattice top.

2Drain peaches thoroughly and set aside.

3Sift together in a bowl the sugar, cornstarch, spices and salt.

4Add cream and lemon juice gradually, blending until smooth.

5Gently mix in peaches. Turn filling into pastry shell, top with pastry strips to form lattice design.

6Bake at 425° for 30 to 35 minutes or until pastry is light brown.

7Serve warm or cold.
