- 1 c. long grain rice, rinsed
- 1/2 c. brown sugar
- 3 1/2 c. hot milk
- 1 Tbsp. grated lemon rind
- 1/4 c. sultana raisins
- 1/2 c. light cream
- 2 Tbsp. mixed candied fruit
- 1 Tbsp. cinnamon
- 1 beaten egg
Directions

1Place rice in 12-cup casserole and sprinkle in sugar.

2Mix in milk and lemon rind.

3Cover and microwave 18 minutes at Medium-high, stirring twice.

4Add raisins, cream, fruit and cinnamon; mix well.

5Continue microwaving 19 minutes, covered, stirring occasionally.

6Add egg, mix well and finish microwaving 2 minutes at low, uncovered.

7Serve plain or drizzled with maple syrup.
