Creole Rice Pilaf

Ingredients
- 1 lb. mushrooms, sliced
- 1 medium onion, chopped
- 1 green pepper, chopped
- few sprigs parsley, chopped
- 1 c. canned tomatoes
- 1 Tbsp. tomato paste
- 1/4 c. salad oil
- 1 Tbsp. butter
- salt and pepper to taste
- 1 c. uncooked rice
- 1 c. water or chicken stock
Directions

1Slice mushrooms into a skillet.

2Add onion, green pepper, parsley, tomatoes, tomato paste, oil, butter, salt and pepper. Place on low heat.

3In about 10 minutes, add the rice and the water.

4Cook for 20 minutes in all.

5Put a lid on the skillet. Add water if the mixture becomes too dry.

6All the liquid should be completely absorbed when the rice is tender.

7Serves 4.
