  • 1 c. flour
  • 1 c. whole milk
  • 1 egg
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 8 drops olive oil

Directions

    Beat all ingredients with hand beater until smooth.

    Continue to add milk until batter no longer forms peaks.

    For each crepe, lightly oil 7 or 8-inch skillet; heat over medium-high heat until oil runs like water.

    Pour scant 1/4 cup batter into skillet; quickly rotate skillet until batter covers bottom.

    Cook until light brown; turn and cook other side until light brown.

    Place crepes on wax paper until cool.

    Stack and cover with Saran Wrap to prevent them from drying out.

    Crepes may be frozen or filled immediately.
