  • 1 c. orange juice
  • 1 1/2 c. canned or frozen peaches
  • 2 Tbsp. brown sugar
  • 2 Tbsp. vinegar
  • 1 tsp. mace or nutmeg
  • 1 tsp. sweet basil
  • 1 clove garlic, minced
  • 6 each fryer legs and thighs
  • 1/2 c. flour mixed with 1 tsp. salt and 1/8 tsp. pepper
  • oil to depth 1/2-inch in large frypan

Directions

    Combine orange juice and peaches with next 5 ingredients in saucepan and cook slowly for 10 minutes.

    Meanwhile, dredge chicken in seasoned flour and brown in hot oil in large pan. Remove chicken, just to pour off oil, retaining flavory bits in skillet.

    Replace chicken and pour fruit sauce over top.

    Cover and simmer for 20 minutes.

    Serves 4 to 6 people.
