Lemon-Roasted Duck

- 4 mallards
- salt and pepper
- 1 stick butter
- juice and rind of 2 lemons
Directions

1Wash the ducks inside and out and dry completely.

2Salt and pepper.

3Melt butter in roasting pan; brown ducks on all sides on top of stove.

4Pour lemon juice in cavities of ducks and put rinds around sides.

5Cook, covered, in 300° oven until tender.

6Remove meat from bones and pour gravy in pan over meat.

7Serves 6.
