Crispy Breaded Chicken

Ingredients

  • 2 boneless chicken breasts approx. 400 g
  • 1/4 cup egg whites
  • 1/4 cup bread crumbs
  • 2 teaspoons black pepper
  • 2 teaspoons coconut oil

Directions

    Pour egg whites into one bowl and mix breadcrumbs and black pepper into the other bowl.

    Place chicken breast into egg whites and flip to ensure that both sides of the breast are coated.

    Remove chicken breast from egg whites and place in breadcrumb mixture until it is evenly coated with a layer of breadcrumbs.

    Repeat steps 2 & 3 for the other chicken breast.

    Preheat oven to 385° F and heat frying pan over a medium-high heat.

    Add coconut oil to pan and fry both chicken breasts for approximately 1-2 minutes on each side or until coating becomes lightly browned.

    Place both chicken breasts on baking tray and bake for 30 minutes at 385° F.
