  • 3 c. corn flakes, crushed
  • 1 tsp. paprika
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried oregano leaves
  • 1/8 to 1/4 tsp. cayenne (red) pepper
  • 1 egg white, beaten
  • 1 lb. boneless, skinless chicken breasts, cut into 1 1/2-inch pieces

    Heat oven to 400°.

    Spray a large cookie sheet with nonstick cooking spray.

    In paper or plastic bag, combine first 5 ingredients. Shake to mix.

    Dip chicken in egg white.

    Shake dipped chicken in cereal mixture to coat.

    Place on prepared pan. Bake 15 to 20 minutes until chicken is no longer pink and coating is crisp.

    Serve with sweet and sour sauce or barbecue sauce. Serves 4.
