  • vegetable oil, for frying (3 cups)
  • 3 (15 ounce) cans chickpeas, drained rinsed and patted dry
  • 1 12 tablespoons ground coriander
  • 1 tablespoon ground cumin
  • 1 cup all-purpose flour
  • kosher salt

Directions

    Heat oil to 350 degrees F in a large saucepan; line a baking sheet with paper towels.

    In a medium bowl, toss the chickpeas with the coriander and cumin; add flour and toss to coat the chickpeas, then transfer to a sieve and tap to release excess flour.

    Fry chickpeas (1/3 at a time) in oil, stirring occasionally, until browned and crispy, about 8 minutes; use a slotted spoon to remove to paper towel lined pan and sprinkle liberally with salt.

    Repeat with remaining chickpeas; let cool and serve.
