Crispy Marinated Carrots

- 1 lb. carrots, thinly sliced
- 1/3 c. chopped onions
- 1/3 c. chopped green peppers
- 1/2 c. vinegar
- 3 Tbsp. vegetable oil
- 1/2 c. sugar
- 1/4 tsp. prepared mustard
- 1 tsp. Worcestershire sauce
Directions

1Cook carrots in a small amount of boiling water about 5 minutes or until crisp-tender; drain.

2Combine carrots, onions and green peppers; set aside.

3Combine vinegar, oil, sugar, mustard and Worcestershire sauce in a jar.

4Cover tightly and shake vigorously.

5Pour over vegetables; toss lightly with a fork. Refrigerate overnight.

6Yield: 6 servings.
